Once considered an oddity, spaghetti squash can now be found at just about any grocery store or farmers market. Halved then baked in a fairly hot oven (400 degrees), spaghetti squash yields sweet, slightly nutty strands that can be used in just about any recipe calling for spaghetti or angel hair pasta.
Transplant starts after danger of a late spring frost is past and the ground temp is around 60 degrees. Black plastic may help warm the soil and will keep down weeds. Patience and a sunny location (at least 6 hours per day, and preferably afternoon sun) will result in about four to six fruits per vine. Squash are ready to harvest when the rinds cannot be dented by a fingernail; use pruners to cut the stem at least an inch away from the fruit for best storage.
