Given that the common olive tree has thrived for centuries in regions with hot dry summers and mild wet winters, it's something of surprise to see that it can grow here in the Pacific NW. Hardy down to 10 degrees Fahrenheit, we often treat it as a summer novelty, but grown in a sheltered location with winter protection (or in container so it can be moved under shelter during extreme cold), olives can thrive here and even produce edible fruits. Prized for its silvery gray-green foliage, the common olive is more upright with smooth gray bark when young then slowly matures into a gnarled trunk with a rounded crown. Given the right conditions, olive trees may produce edible fruit one to two years after planting.
