Provence French lavender is a great candidate for a low-growing evergreen hedge or small specimen in sunny gardens, reaching three feet in height and spread. Top that with fat flower spikes in the summer that are often three inches long, and Provence will fulfill a lavender lover's every wish. Deer-resistant and drought tolerant, this variety is low-maintenance. A bit of pruning after Provence has finished blooming will keep the shrub tidy and the clippings can be used for culinary purposes or in sachets or potpourris.
