Close'Olympia' spinach is a beautiful dark green, smooth leaf hybrid, capable of withstanding late spring frosts, and slow to bolt in the summer. When harvesting individual leaves, pick both the stem and the leaf, and use fresh or cooked. The entire plant may be harvested by cutting the stems about one inch above the soil. New leaves should emerge for a second crop. Spinach grows well in large containers and makes it easier to protect the crop from marauding slugs.
