Serrano peppers are definitely at the hotter end of the scale, though rate "only" as medium-hot to hot. A prolific producer of 2" - 3" long peppers, the longer they stay on the bush, the redder they will become. These candle-shaped peppers may be picked while green, or patient gardeners can wait for full maturity around 80 - 90 days after planting. The pepper of choice for pico de gallo, serrano peppers are also popular for pickling or stir-fried dishes.
