'Black Beauty' is the largest variety of eggplant that many home cooks enjoy, with up to six-inch long, oblong fruits that can weigh from 1 to 3 pounds each. The large size and tender skin makes this variety perfect as a wrap for fillings (eggplant involtini) or as "steaks" when sliced into rounds (eggplant parmesan). Eggplant loves the heat, so best practice for most areas is to start the seed indoors and plant outside when the soil temp and nighttime air temp are at least 60 degrees F.
