Chinese broccoli, aka Chinese Kale or Gai Lan, can be substituted for regular broccoli in dishes, although it may be a bit more bitter and has a slightly different flavor profile. It is more heat tolerant than regular broccoli or kale, so the plant will continue to produce harvestable side shoots after the main stem is cut. Blanching or quickly steaming Chinese broccoli before stir-frying will shorten the cooking time and enhance the flavor.
