Generally speaking, the bok choy you see in stores have long, thick white stems, dark green leaves and are quite large. Toy Choy is a baby version of that, reaching only five inches tall and wide at maturity. It's compact size makes it perfect for container gardening, and because it matures so quickly, can be planted in succession. It will bolt if the weather gets too hot, but it can be sown in the late summer or early fall for one last harvest.
