'Bull's Blood' Beets are one of those "two-fer" crops, where gardeners can enjoy both the tender red leaves and the roots. This French heirloom beet has incredibly red foliage that is delicious and nutritious. Some fans suggest growing a row of this variety for the leaves and another row for the roots, although up to 1/3 of the leaves may be harvested at a time with no harm to the root growth. A cool weather crop, 'Bull's Blood' beets can be planted in the early spring before last freeze as well as in the late summer for a fall harvest. For best root production, plant seedlings four inches apart. If thinning is necessary, those discarded seedlings may be eaten fresh.
