'Imperial Star' artichokes were originally developed as an annual crop for CA growers, but in the Pacific NW, it can be grown as a perennial, reaching about four feet tall and wide by season's end. Depending upon the weather, it may take a year before the plant produces edible flower buds that can be two- to four inches across in size. Harvest the main bud an inch below the base of the bud, and side shoots will produce much smaller artichokes that are completely edible. Imperial Star buds are slow to open, so gardeners will have more time to harvest the bud before it flowers.

Consider leaving one bud on the plant so it can flower. They're truly unique and a beautiful blue, rather surreal looking flower.
