CloseArtichokes are one of those veggies that may seem like an extravagance if bought in the store, so if you have the room, grow your own. Green Globe Improved does well in the Pacific NW and many gardeners appreciate them as much for the beautiful silvery blue leaves as they do the artichokes themselves. Artichokes ride out the winter, often never fully dying back, and when the weather starts to warm, artichokes come to life as well. Green Globe Improved will grow easily to five feet tall, spreading to just as wide, producing 'chokes with very few spines.
